Cheesy Sweet Potato & Beef Quesadillas

These sweet potato & beef quesadillas are an excellent grab-and-go snack for after school. They are easy to make, packed with flavor, and filled with nutritious ingredients to keep your kids satisfied. Plus, they’re a fun and tasty way to add in some extra veggies!

Ingredients

  • 1 pound ground beef

  • 2 tablespoons taco seasoning

  • 2 Bako Sweet Potatoes, peeled and chopped

  • 3 mini red peppers, sliced

  • 1 small onion, diced

  • Salt/pepper to taste

  • 2 cups Colby jack shredded cheese

  • 6 large flour tortillas

  • 2 tablespoons olive oil

  • ½ cup ranch crema (or dressing)

  • 2 tablespoons fresh cilantro, chopped

 


Directions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat and add in the taco seasoning. Stir to combine and scoop the meat into a dish and set aside.

  2. In that same skillet, heat 2 tablespoons of olive oil over medium-high heat. Add in the chopped Bako Sweet Potatoes, peppers, and onions, and cook for about 10-12 minutes, stirring occasionally, until the veggies are tender.

  3. To assemble the quesadillas, wipe the skillet clean and heat it over medium heat. Place a tortilla in the skillet and layer on one half of the tortilla with a serving of ground beef and the sweet potato mixture. Top with a generous handful of Colby jack shredded cheese and fold the tortilla over to cover the filling.

  4. Cook for 2-3 minutes on each side, until the tortilla is golden brown, and the cheese is melted.

  5. To serve, remove the quesadilla from the skillet and let it cool for a minute before slicing. Drizzle with ranch crema and sprinkle with fresh cilantro. Enjoy!
