Grilled Sweet Potato Rounds
A quick + easy recipe for grilled sweet potato rounds with rosemary sprigs and yummy spices!!!

Ingredients
2-3 large sweet potatoes
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
Fresh rosemary sprigs
Optional: red pepper flakes for extra heat
Directions
Slice the sweet potatoes into 1/4-inch thick rounds for even cooking (you can peel the skin off before you cut if you would like).
In a large bowl, combine the olive oil, smoked paprika, garlic powder, dried thyme, dried oregano, salt, and pepper. Add the sweet potato slices to the bowl and toss to coat them evenly with the seasoning mixture.
Preheat your grill to medium-high heat.
Place the sweet potato slices directly on the grill grates. Grill for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Adjust the time as necessary depending on the thickness of your slices and the heat of your grill. If you want to add some extra flavor, place fresh rosemary sprigs on the grill next to the sweet potatoes while they cook.
Remove the sweet potatoes from the grill and transfer them to a serving platter. Garnish with the grilled rosemary sprigs and a sprinkle of red pepper flakes if you like a bit of heat. Serve immediately as a delicious side dish!!!
