Loaded Greek Sweet Potato Fries
Sweet potato fries loaded edition. Eat with a fork or your hands - just make sure you have napkins nearby, and enjoy!

Ingredients
Sweet Potato Fries
3 large, sweet potatoes
1-2 Tbsp olive oil
salt and freshly cracked black pepper to taste
garlic powder to taste
Marinated Chickpeas:
1 15-ounce can chickpeas
¼ cup red wine vinegar
¼ cup olive oil
¼ fresh parsley
½ small lemon
3 cloves garlic
½ cup roasted red peppers
1 tsp oregano
¼ tsp salt
pinch of freshly cracked black pepper
Toppings + Garnishes:
½ English cucumber
½ cup crumbled feta cheese
1 cup cherry tomatoes
homemade or store-bought tzatziki sauce
½ small lemon
Directions
Chop the sweet potatoes into long fries. They should be somewhat thin but thick enough to be able to withstand lots of yummy toppings! Think of a thin potato wedge as your inspiration.
Place on a baking sheet with a drizzle of olive oil and salt, pepper and garlic powder. Mix to combine with your hands and make sure that the fries are single file on the pan. Bake at 400 degrees for 30-35 minutes, flipping them halfway through.
While the sweet potatoes are baking, slice and dice all your toppings and make the marinated chickpeas!
Mince the fresh garlic, slice a small lemon in half, chop fresh parsley and dice the roasted red peppers. Set aside.
Drain the can of chickpeas and add to a bowl.
Then, mix in the fresh garlic, parsley, roasted red peppers and squeeze the ½ of a lemon to the bowl. Add red wine vinegar, olive oil and spices and mix together. Taste and adjust seasoning if needed. Set this bowl in the refrigerator for 20-30 minutes to let the chickpeas marinate.
While the fries are baking and the chickpeas are marinating, dice your toppings! Slice the cucumber into halfmoons, slice cherry tomatoes long ways and prepare the tzatziki sauce and feta cheese.
Once the fries are done, you can keep them on the sheet pan to keep it simple or transfer to a large flat plate. Top with a generous portion of chickpeas and toppings. Drizzle on tzatziki and sprinkle a generous amount of feta cheese. Eat with a fork or your hands - just make sure you have napkins nearby, and enjoy!
