Savory Twice Baked Sweet Potatoes

This savory, cheesy twice-baked sweet potato recipe is everything you need to bring warmth and flavor to your holiday table. With its creamy texture, festive presentation, and, yes, all that cheesy goodness, it’s a must-have addition to your menu.

Ingredients
2 oz cream cheese, room temperature
1 Tablespoon, unsalted butter
4 green onions, thinly sliced, reserve one for garnish
5 oz sharp cheddar cheese, grated
Salt
¼ cup sour cream
2 teaspoons Hot sauce
½ teaspoon Garlic powder
Directions
Wash sweet potatoes thoroughly, pat dry, and poke a few holes in the sweet potatoes with a fork.
Roast on a foil lined sheet tray at 400 degrees for about 50 minutes or until they can be easily pierced with a fork. Remove from the oven and let the potatoes cool for about 10 minutes, until they are cool enough to handle.
Preheat the oven to 450 with a rack in the middle.
Once the potatoes are cool enough to handle, carefully slice the top third of the potato, holding the knife at an angle, working around the potato until the top can be removed. Scoop out the flesh from the sweet potato tops and discard the leftover skins.
From the remaining sweet potatoes, scoop out the flesh, leaving about ¼” of flesh around the sweet potato to create the shell. Return the sweet potato shells to the baking sheet and sprinkle the inside with kosher salt.
To the bowl of sweet potato flesh, add the cream cheese, butter, scallions, 1 cup of the cheddar cheese, salt, pepper, sour cream, hot sauce, and garlic powder. Mash until combined. Taste and season with more salt and pepper if desired.
Generously fill the sweet potato shells with the mixture, topping with the remaining cheese.
Bake until the filling is hot and the cheese is melted, about 15-20 minutes.
Top with the remaining green onions and a drizzle of sour cream and hot sauce if desired.
