Sweet Potato Cinnamon Rolls

Sweet potato cinnamon rolls are a fun twist on the classic cinnamon roll, incorporating the natural sweetness and velvety texture of sweet potatoes into the dough. The sweet potatoes not only add a beautiful golden-orange hue but also help to add moisture which makes these cinnamon rolls have a super soft and tender crumb.

Ingredients

For the dough:

  • 1 cup whole milk

  • ½ cup unsalted butter melted

  • 1, .25 oz. packet active dry yeast

  • ⅓ cup granulated sugar

  • 1 egg + 1 yolk

  • 1 cup roasted sweet potato

  • 3 ½ - 4 cups bread flour

  • 1 tsp. salt.

 

For the filling:

  • ½ cup unsalted butter softened

  • ⅔ cup dark brown sugar

  • 2 tbsp. ground cinnamon.

For the glaze:

  • 1 cup powdered sugar

  • 1 tbsp. butter melted

  • 1 tsp. vanilla

  • 2 tbsp. milk


Directions

Sweet Potato Cinnamon Rolls

  1. Roast the Bako Sweet sweet potatoes in a 400°F oven for 1 hour or until tender and cooked through.

  2. Mash the sweet potato and set aside to cool.

  3. Heat the milk in the microwave until it reaches 105-115°F. Just lukewarm.

  4. Pour the milk into the bowl of a stand mixer with the paddle attachment, sprinkle yeast on top.

  5. Add the sugar, egg and yolk, melted butter, and sweet potato and mix just until combined on low speed.

  6. Add the 3 ½ cups flour and the salt, and mix again just until combined.

  7. Add the dough hook and knead for 8 minutes or until dough begins to pull away from the sides of the mixer.

  8. Add more flour if the dough is still very sticky.

  9. Grease a large bowl, place dough in the bowl. Cover with plastic wrap and a warm towel. Rise for 2 hours.

  10. Line a 9x9 pan with parchment paper. Roll out the dough into a large rectangle on a lightly floured surface, spread softened butter on top, then combine the sugar and cinnamon and sprinkle that on top.

  11. Cut cinnamon rolls into 9 rolls, roll and place in pan. Cover with plastic wrap and a warm towel and rise again for 30 minutes - 1 hour.

  12. Bake at 350 for 25-30 minutes or until lightly browned on top. Cool, then whisk together glaze ingredients and spread on top!
