Sweet Potato Dumplings

These dumplings are a perfect combination of sweet potato, tangy cheese and caramelized onions. Serve with a dollop of sour cream to finish the dish.

Cook time: 40 minutes

Ingredients

  • 2 tablespoons butter or plant based spread

  • 1 medium onion, chopped

  • 1 pound (4 medium) Bako Sweet® Sweet Potatoes*, peeled and cut into chunks

  • 1/3 cup shredded sharp Cheddar or Gouda cheese

  • 1/4 cup milk

  • 1/4 teaspoon dried thyme

 
  • 1/8 teaspoon salt or to taste

  • 5 large dumpling wrappers

  • Snipped fresh chives

  • Sour cream, optional


Directions

Mashed Sweet Potatoes

  1. Place sweet potatoes in a microwave-safe bowl and add 1/2-inch water.

  2. Cover with plastic wrap and pierce to vent.

  3. Microwave on HIGH for 7 to 8 minutes or until potatoes are tender. Carefully drain excess water and mash.

Dumplings

  1. Melt butter in a large skillet over medium heat.

  2. Add onion and cook for 10 minutes, stirring frequently.

  3. Reduce heat to low and cook for 20 minutes more or until soft and golden brown.

  4. Add the onion, cheese, milk and thyme to the mashed sweet potatoes, then season with salt.

  5. Place dumpling wrappers on a board in a single layer and place equal amounts of sweet potatoes into the center of each. Brush the empty part of the wrapper with water and pull up one corner into the center of the dumpling. Carefully pleat the wrapper by folding over in 1/2-inch increments until the potato is fully enclosed. Press gently to seal and twist slightly to make a slight pinwheel pattern.

  6. Place several inches of water in a large skillet with a lid and bring to a boil. Carefully place dumplings in water and cover skillet.

  7. Reduce heat and let steam for 10 minutes.

  8. Transfer to a plate and sprinkle with chives. Serve with sour cream, if desired.

*While most of the sweet potatoes are close to the same size, there are a few bigger and smaller potatoes in each bag. Choose 8 medium potatoes that are the same size.
