Sweet Potato Goat Cheese Bites

Ingredients
3 Bako Sweet Potatoes, sliced into ½-inch thick rounds
1 tbsp. olive oil
Pinch salt, cinnamon, sugar
10 oz. goat cheese log (allow to sit at room temperature for 15 minutes)
3 tbsp. heavy cream
⅓ cup dried cranberries
⅓ cup crushed walnuts
2 tbsp. fresh thyme
Honey for drizzling
Directions
Preheat the oven to 400°F.
Mix salt, sugar, and cinnamon in a small bowl and set aside.
Brush both sides of the sweet potato rounds with olive oil, then sprinkle with the sugar mixture.
Place rounds on a parchment-lined baking sheet.
Bake for 10–15 minutes, flip, then bake another 15 minutes (check after 10 minutes to prevent over-browning).
Meanwhile, blend the goat cheese and cream in a food processor until smooth.
Once the rounds have cooled slightly, top each with a teaspoon of the goat cheese mixture, then sprinkle with walnuts and dried cranberries.
Finish with a honey drizzle and serve immediately.
