Sweet Potato & Spinach Egg Bites

Ingredients
2 cups baby spinach
1 medium yellow onion
1 tbsp avocado oil
4 eggs
1 cup non-dairy milk
1/4 cup feta cheese or nutritional yeast
1 tsp herb seasoning
1/2 tsp salt
1/2 tsp black pepper
Directions
Start by dicing all veggies. Add avocado oil to a pan and add in the veggies.
Cook veggies for 5-7 minutes or until sweet potatoes are soft.
In a large bowl, whisk together the remaining ingredients. Add in the cooked veggies and mix again.
Spoon mixture into a greased tin or silicon muffin tin.
Bake at 350°F for 20-25 min or until cooked through.
Let cool and enjoy!
