Sweet Potato & Spinach Egg Bites

Ingredients

  • 2 Bako Sweet purple sweet potatoes

  • 2 cups baby spinach

  • 1 medium yellow onion

  • 1 tbsp avocado oil

  • 4 eggs

  • 1 cup non-dairy milk

  • 1/4 cup feta cheese or nutritional yeast

  • 1 tsp herb seasoning

  • 1/2 tsp salt

  • 1/2 tsp black pepper

 


Directions

  1. Start by dicing all veggies. Add avocado oil to a pan and add in the veggies.

  2. Cook veggies for 5-7 minutes or until sweet potatoes are soft.

  3. In a large bowl, whisk together the remaining ingredients. Add in the cooked veggies and mix again.

  4. Spoon mixture into a greased tin or silicon muffin tin.

  5. Bake at 350°F for 20-25 min or until cooked through.

  6. Let cool and enjoy!
