Sweet Potato Wedges
These roasted sweet potato wedges are a simple, yet perfect way to incorporate more veggies into your weekly diet!

Ingredients
2 large Bako sweet potatoes
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cumin
Salt and pepper to taste
1/4 cup fresh cilantro, finely chopped
Zest of one lime
Salt and pepper to taste

Sweet Potato Wedges
Preheat your oven to 400°F
Prep the sweets:
Cut the sweet potatoes into wedges. Aim for even-sized wedges for consistent cooking.
In a large bowl, toss the sweet potato wedges with olive oil, paprika, garlic powder, cumin, salt, and pepper. Ensure the wedges are well coated.In a large bowl, toss the sweet potato slices with olive oil until evenly coated.
Roast the sweets:
Arrange the seasoned sweet potato wedges on a baking sheet lined with parchment paper or a silicone baking mat. Make sure the wedges are spread out in a single layer to allow even cooking.
Roast in the preheated oven for about 25-30 minutes or until the wedges are golden brown and tender, flipping them halfway through the cooking time for even browning.
Serve the sweets:
Once the sweet potato wedges are done, transfer them to a serving plate. Sprinkle the cilantro and lime zest for generously over the roasted sweet potatoes adding in salt + pepper to taste.
