Sweet Potato Wedges

These roasted sweet potato wedges are a simple, yet perfect way to incorporate more veggies into your weekly diet!

Ingredients

  • 2 large Bako sweet potatoes

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • Salt and pepper to taste

  • 1/4 cup fresh cilantro, finely chopped

  • Zest of one lime

  • Salt and pepper to taste

 

Directions

Sweet Potato Wedges

  1. Preheat your oven to 400°F

  2. Prep the sweets:

    • Cut the sweet potatoes into wedges. Aim for even-sized wedges for consistent cooking.

    • In a large bowl, toss the sweet potato wedges with olive oil, paprika, garlic powder, cumin, salt, and pepper. Ensure the wedges are well coated.In a large bowl, toss the sweet potato slices with olive oil until evenly coated.

  3. Roast the sweets:

    • Arrange the seasoned sweet potato wedges on a baking sheet lined with parchment paper or a silicone baking mat. Make sure the wedges are spread out in a single layer to allow even cooking.

    • Roast in the preheated oven for about 25-30 minutes or until the wedges are golden brown and tender, flipping them halfway through the cooking time for even browning.

  4. Serve the sweets:

    • Once the sweet potato wedges are done, transfer them to a serving plate. Sprinkle the cilantro and lime zest for generously over the roasted sweet potatoes adding in salt + pepper to taste.
