Cinnamon Graham Stuffed Sweet Potatoes
This sweet potato recipe combines the best of creamy and crunchy. If you prefer a sweeter flavor, add a tablespoon of pure maple syrup.

Cook time: about 15 minutes.
Ingredients
Filling
1 tablespoon butter
1 tablespoon plain Greek yogurt
1 tablespoon pure maple syrup (optional)
Pinch sea salt or to taste
Topping
2 tablespoons crumbled graham cracker crust
2 tablespoons sliced almonds, toasted
1/8 teaspoon cinnamon
Directions
Microwave sweet potatoes according to package directions.
When cool enough to handle, cut in half horizontally. Scoop out the flesh with a small spoon into a medium-size bowl.
Mash with a fork then stir in butter, yogurt and syrup, if using.
Season with salt to taste and spoon back into potato skins.
Break up almonds into small pieces with your fingers and mix with graham cracker crust and cinnamon.
Sprinkle over potatoes.
Makes 4 servings.
