Healthy Sweet Potato Snickerdoodle Cookies

Ingredients
½ cup cooked mashed sweet potato
2 tbsp coconut oil, melted and cooled
1 tsp vanilla extract
⅔ cup whole wheat flour
⅔ cup almond flour
⅓ cup natural cane sugar
1 tbsp cinnamon
Directions
For cinnamon sugar coating mix 3 tbsp sugar + 2 tsp cinnamon in a bowl and set aside
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Add the mashed sweet potato, coconut oil, and vanilla into a bowl and mix well. Pour in the flours, sugar, and cinnamon and mix until fully combined.
Scoop 2 tablespoons of batter for each cookie, rolling it into a smooth ball and then rolling in the cinnamon sugar. Place on the baking sheet and gently press down into the shape you want the cookies to be. They will not spread.
Bake for 12-15 minutes, or until the cookies look golden. Let the cookies cool a few minutes before transferring to a wire rack. Enjoy!
