Mediterranean Sweet Potato and Egg Scramble
Sweet potatoes are an ideal way to start the morning – they’re filled with energizing carbohydrates and heart-healthy fiber. Sweet potatoes are also a great source of potassium, which can help regulate blood pressure. Try this Mediterranean scramble for your next healthy breakfast!

Ingredients
4 large eggs (scrambled)
3 teaspoons olive oil, divided
1 medium Bako sweet potato, diced into 1/2-inch pieces
1 roma tomato, diced into 1/2-inch pieces
2 large handfuls spinach
1/4 cup crumbled feta cheese
1 teaspoon dried oregano
Salt and pepper, to taste
Directions
Mediterranean Sweet Potato and Egg Scramble
In a skillet, heat 2 teaspoons of olive oil over medium heat. Add diced sweet potato and a splash of water, then cover and cook for 9-10 minutes, stir occasionally.
Stir in the diced tomatoes and spinach. Then move to one side of the pan and add remaining 1 teaspoon olive oil.
Add scrambled eggs and stir to cook. Fold eggs into veggie mixture then top with feta, oregano, salt, and pepper. Store up to 3 days in the fridge.
