Spooky Cockroach Halloween Cupcakes

SPOOKY 🕷️cockroach🕷️ Halloween cupcakes coming your way with the healthiest and most nourishing frosting!! The natural orange color comes from our Orange Sweet Potatoes - packed with fiber, potassium, and beta-carotene and are a great way to add more nourishment to your desserts. Pair the sweet potato frosting with a black chocolate almond flour cupcake that is so moist and delicious.

Ingredients

Cupcakes:

  • 1 cup unsweetened applesauce

  • 3 eggs

  • 1.5 tbsp coconut oil, melted

  • 2 tsp apple cider vinegar

  • 1 tsp vanilla extract

  • 1/2 cup almond flour

  • 1/4 cup coconut flour

  • 1/4 cup black cocoa powder

  • 1/4 cup natural cane super

  • 3/4 tsp baking soda

  • 1/4 tsp sea salt

  • 1/4 cup mini chocolate chips

 

Sweet Potato Frosting:

  • 2-3 orange Bako Sweet sweet potaotes

  • 1/2 cup coconut oil (melted)

  • 1/3 cup maple syrup

  • 1 tsp vanilla

Cockroach:

  • 1 pitted dates (body)

  • Chocolate chip (head)

  • Melted chocolate (legs & antenna)


Directions

Bake the cupcakes:

  1. Preheat the oven to 350 degrees F.

  2. Add 12 muffin liners to muffin tin. Mix all the ingredients together (except chocolate chips) until smooth, then stir in chocolate chips.

  3. Scoop into muffin tin and bake for 20-22 minutes, or until a toothpick comes out clean or with dry crumbs.

Make the frosting:

  1. Pierce 2-3 orange sweet potatoes a few times with a fork and place on a parchment paper-lined baking sheet.

  1. Bake in a 400-degree F oven for 40-50 minutes, or until a knife can easily poke through the center.

  2. Allow to cool slightly, cut in half, and then mash the sweet potato flesh.

  3. Add 1 cup of mashed sweet potato, 1/2 cup melted coconut oil, 1/3 cup maple syrup and 1 tsp vanilla extract to a food processor and blend until smooth.

  4. Transfer to a glass storage container and place in the fridge overnight or for at least 8 hours. After the sweet potato frosting has chilled and becomes firmer, it is ready to use! Add to a piping bag and top your black chocolate cupcakes with it.

Top with Halloween fun:

  1. To make a cockroach, add a pitted date for the body, chocolate chip for the head, and pipe melted chocolate for the legs and antenna.🕷️🍠
