Sweet Potato Chicken Nuggets

Ingredients
2 Bako Sweet sweet potatoes
1.5 lbs chicken breasts
3 tsp salt (separated)
2 tsp garlic powder (separated)
1/2 cup flour
1/3 cup milk
1 egg
cooking spray
Directions
Sweet Potato Chicken Nuggets
Cook your Bako Sweet sweet potatoes however you like (I cooked them in the microwave, pierce them and cook for about 5 minutes).
In a food processor combine the flesh of the sweet potatoes, chicken breasts, 1 tsp salt and 1 tsp garlic powder and blend until chicken has been finely chopped and all the ingredients are well combined.
Use a cookie scoop to make uniform nuggets.
Fill one small bowl with flour, 2 tsp salt and 1 tsp garlic powder and whisk to combine.
Fill another bowl with milk and egg and whisk to combine.
Take each nugget and coat in the egg mixture then in the flour mixture.
Place just enough nuggets in your air fryer to fill the bottom and spray the tops with cooking spray.
Air fry at 400 for 10 minutes, flipping them halfway through and spraying them again liberally with spray.
Enjoy with your choice of dip!
