Gluten Free Sweet Potato Bao

Soft and fluffy gluten free bao, filled with our delicious and tender sweet potatoes! Inspired by Chinese steamed buns, the texture is incredible and they’re a lot easier than they look!

Ingredients

Filling

  • 2 medium Bako Sweet sweet potatoes (about 3/4 lb)

    2 tbsp milk of your choice

    1 tbsp your favorite cooking oil

    1/2 tsp sea salt

    1/2 tsp Chinese five spice

 

Buns

  • 1 1/2 tsp instant yeast

    2 tsp granulated sugar

    1 cup warm water (not hot)

    2 1/4 cup gluten free flour (with xanthan gum)

    1/4 tsp baking soda

    1/2 tsp sea salt


Directions

Gluten Free Sweet Potato Bao

  1. Peel the sweet potatoes then cut into 3 inch chunks. Boil in a large pot for salted boiling water for 15 minutes until fork tender. 

  2. Cool the sweet potatoes slightly, then add to the food processor with the rest of the filling ingredients. Process until smooth. Set aside.

  3. Stir together instant yeast, sugar, and warm water in a large bowl and let sit for 10 minutes until foamy. 

  4. Add flour, baking soda, and sea salt and stir until dough forms. Use your hands to knead until smooth and form into a ball.

  5. Cover with a kitchen towel and let them sit for about 1 hour at room temperature until it doubles in size. 

  6. Sprinkle flour on a clean surface, then knead the dough on it a few times. Divide the dough into 10 equal pieces.

  7. Shape a piece into a ball, then flatten it out into a circle. Add about 1 rounded  tbsp of sweet potato filling in the center, then close the outer edges to close over the filling into a ball. Place on parchment paper and cover with a towel. Repeat with the rest of the dough and filling. Keep covered with a kitchen towel and let them sit for 15 minutes until they puff slightly. 

  8. Heat a pot of water over high heat until it comes to a boil. Placesteamer baskets in the pot lined with parchment paper. 

  9. Lower the heat to medium, then steam the buns covered for 8 minutes. Turn off heat and let the buns sit for 1 minute before opening the lid. 

  10. Enjoy warm. These will harden once cooled. Just reheat in the microwave or steam until they are soft and fluffy again.
